Margo Cordner grew up on Orcas Island, went to school at the Art Institute of Seattle, and has lived in Ellensburg since 2002. She has worked in the restaurant business for about 16 years on and off. Margo first started as a server, prep cook, and baker at the Deer Harbor Inn on Orcas Island. She has also worked as a hostess and server at a cafe in Seattle before moving to Ellensburg where she worked as a cook and kitchen manager at the Yellow Church Cafe for 10 years.
Margo has worked at Lunchbox Cafe for 3 1/2 years and became the owner in June of 2016.
Margo believes that people should try Lunchbox if they’re tired of the same old options for lunch. She says, “we have tasty and healthy options that are just as fast and convenient as going to a chain restaurant. It’s great for people that have special dietary needs, such as vegetarian, vegan, or gluten free. We do a lot of customizing!”
Lunchbox Cafe is an active member of the Ellensburg community. Margo caters boxed lunches locally. Lunchbox is especially interested in giving to local causes that have to do with ending hunger, helping animals, and the environment.
